Red Berry Porridge

So in my last blog post I talked about the importance of carbohydrates in your diet, I used the term ‘Complex Carbs’. These are carbs that release energy slowly into the blood stream, and leave you feeling fuller for longer.

Oats are a prime example of a complex carb and are a great way to start your day with a tasty well filling breakfast.

1 x cup Rolled Organic Oats

Handful of Frozen berries

1/2 x cup Almond Milk

1 tsp x Peanut Butter

1/4 x cup Chia seeds

1/2 x Fresh blueberries & blackberries

In a pan pour 1/2 cup of water and 1/2 cup of almond milk. Then add a cup of rolled oats and a spoonful of chia seeds. Stir well. Allow the mixture to thicken and then add more water if it becomes to thick too quickly. (I sometimes like to also add mashed banana to the oat mixture while it is thickening). Next stir in a handful of frozen berries and allow the juices to mix in, turing the colour slightly pink.

Top your porridge with fresh blueberries and blackberries and drizzle with peanut butter.
